Rgaif with onion stuffing

Ingredients
# For the dough:
500 g flour
1 tsp salt
1 tbsp dry yeast (7g)
1 tsp sugar
# For the filling:
700 g onion
2-3 tbsp sunflower oil
30 olives (20 black and 10 green)
1-2 chili peppers, green
a pinch of salt and ginger powder, 1/2 tsp paprika

Method
Yeast mixed with sugar and 6 tbsp warm water and leave 15 minutes to warm it rise. Sift the flour in a bowl with a flat bottom, suitable for kneading. Add effervescent yeast and 350 ml warm water. Kneaded very well, if necessary, add more warm water to keep the dough soft, moist and elastic. Chop strips, not too thin. Fry briefly in very hot sunflower oil (to catch brown crust), put all the spices and olives, cut into julienne, reducing kotlonat and stew until soft. Then cover the dish and cook until the fat remains. From the dough form 20 balls by hand and hob brushed thoroughly with sunflower oil. Each ball is disarrange hands until a thin circle, put a pad wrap up the edges. Disarrange a second round, the resulting envelope is placed in it and screw back. Thus obtaining 10 bundle. Each of the bundles is pressed with fingers until a flat square.
