Meatballs with eggplant

Ingredients
3 large eggplants (about 800 g)
400-500 g minced meat
4 eggs
50 ml milk or cream
7-8 tbsp oatmeal or breadcrumbs
1 large bunch of parsley
2-3 cloves garlic (or to taste)
pepper, salt
1 roasted pepper optional
50 ml sunflower oil
oatmeal or breadcrumbs for rolling

Method
Eggplants baked, peel and cut into small pieces. Mixed with minced meat, 2 eggs, milk, chopped parsley, blend garlic, chopped pepper and spices. Add salt thoroughly. Knead well. Add oatmeal (or breadcrumbs, or both), until the mixture becomes slightly firmer. Allow to absorb at least 30 minutes in the refrigerator. Already tight mixture formed meatballs. Heat the oven to 220C. Beat the remaining 2 eggs with the oil and meatballs Oval in them, and then oatmeal (or breadcrumbs). Arrange in pan on baking sheet and bake until ready, about 25 minutes.

Glad Reni! Since last year Marina had written that the eggplant was called the *meat of the band's* haunted me the idea to mix eggplant with minced meat. Twice already do these meatballs and even my son who does not like eggplant, eat fairly large quantities :) I see that you served with a sauce (or dip?). What is this? I serve them one time with garlic yogurt sauce and the other time with Pate Avocado

Rally I filled them with mashed potatoes (I think goes well). :)

again made them :) became a favorite at home :)

Very tasty meatballs! Garlic sauce made with yogurt and mayonnaise. We liked a lot. Will certainly make a lot of times! :)
