Fried eggplant with white sauce

Ingredients
4 eggplants
2 eggs
Flour
breadcrumbs
vegetable oil for frying
salt
# For the sauce:
500 g yoghurt
2-3 cloves garlic
parsley
salt

Method
Peel the eggplants, cut into slices, add salt and leave an hour - hour and a half inclined court to drain their bitter juice. Rolled in flour, dip in beaten eggs and pressed on both sides in breadcrumbs. Fry immediately in a highly heated vegetable oil until golden color. Serve swamped with sauce made from yogurt, mixed with a little salt, crushed garlic and chopped parsley.
