Stuffed peppers with eggplant

Ingredients
500 g minced meat
100 g rice
1 eggplant
1 tomato
salt
parsley
10-15 peppers
1 onion
Method
Insert 4-5 tbsp sunflower oil, cut it chopped onions and fry. Add the minced meat crumbs and fry it. Eggplant cut into small cubes and fry it, put it rice, grated tomato, salt and chopped parsley. Everything is mixed and filled previously cleaned peppers. Arrange in a greased baking pan pour water and bake in a moderate oven. Turn on both sides to bake.
