Fishing village salad (Insalata Paesana)

Ingredients
120 g dry salami or lukanka
80 g clams, fresh or pickled
80 g shrimp
80 g of squid meat
80 g crab meat
1 onion
1 clove garlic
120 g sheep cheese - such as pecorino, Brocho or Kanestrato
150 g tomatoes
8 tbsp balsamic vinegar
pinch of cayenne pepper
handful of fresh basil leaves
salt
pepper
olive oil

Method
Salama is cut into strips and put aside. Tomato cut into cubes. All seafood drain. Cut the garlic, chop the onion too. Heat a little olive oil, fry the onion is (slightly), put the garlic and seafood. Fry briefly, but of a very hot fire. To put spices, stir and remove from fire. Add tomatoes and salami, stir and leave to cool. Put vinegar and more olive oil as a marinade. Served with basil and grated sheep cheese.
