Fried meatballs stuffed with brains and eggs

Ingredients
400 g of beef ribs
100-150 g streaky pork
100 g of cooked beef marrow
2 eggs
1 and 1/2 slices of old white bread without crust
1 onion
salt
pepper
parsley
2 tbsp milk
meal
fat frying
Method
Cleaned meat is cut into large pieces and sprinkle with salt water. Once mature 1 hour, milled twice. The second time, together with the meat is chopped bread moistened with milk and onions. Minced meat is kneaded with an egg, pepper and chopped parsley and spread out on floured board to a thickness of 1.5 cm. With water glass cut 16 rounds. In the middle of 8 of them is placed in the small of the mixture obtained from the brain, mixed with the yolk of the second egg, pepper and a pinch of salt. Coat with the remaining 8 rounds, such as the ends are pressed to stick together. Rolled in flour and fry in very hot oil until light brown.
