Hen sauce Vinaigrette

Ingredients
1 hen
30 g butter
100 g minced meat pork
4 tbsp (40 g) breadcrumbs
milk
1 chicken liver
1-2 eggs
parsley
pepper
salt
1 carrot
piece sweet turnip
1 onion
1 stalk leek
piece of celery
Sauce Vinaigrette
Method
Breadcrumbs pour milk, allow to be soaked well and mixed with ground meat, grated liver, eggs, parsley, pepper and salt. Cleaned hen is filled with stuffing, fry in a pan with butter, add the vegetables, salt and pepper and pour the water so as to be submerged, then boil over very low heat until soft. 10 minutes before the end of the vegetables were removed and added to new. Boiled chicken is placed in a dish, decorate with chopped vegetables and served with vinaigrette sauce.
