Rice with vegetables and thyme

Ingredients
1 onion
2 tomatoes
1 zucchini
1 red pepper
1 green pepper
2 tbsp olive oil
1 tsp cayenne pepper, red pepper and dried thyme
2 cloves garlic
1 and 1/4 cup Rice
3 cups vegetable broth
2 tbsp parsley
1 lemon
pepper, salt
Method
Heat olive oil over medium heat, add cayenne, chopped onion, crushed garlic and fry for 5-6 minutes. Add cleaned of seeds, diced tomatoes, diced zucchini and peppers. Finally put the thyme, salt and pepper. Capped with a lid and stew for 15 minutes. Add the rice, a nice mix, pour bouillon and bring to the boil. Reduce heat and allowed to stew for another 25-30 minutes until soft rice. Serve sprinkled with chopped parsley and lemon pieces.
