Fruit zephyr

Ingredients
1 kg apples, quinces or apricots
5 egg whites
2/3 cup sugar
1 packet of vanilla
1/3 cup chopped walnuts
Method
Fruits are baked in the oven, Strain and beat with a little sugar. Whip (warm) with the remaining sugar on hard snow and add to fruit purée with mild agitation. Pour the mixture into glasses and sprinkle with walnuts. Dessert is served chilled.
