Ingredients
4 fresh herring
3/4 cup (150 ml) milk
1 cup (200 ml) white wine
2 tbsp (20 ml) vinegar
1 onion
1 clove garlic
1 tsp (5 g) mustard
2 yolks
2 tbsp (20 g) sour cream
1 tsp (5 g ) paprika
6 peppercorns
Method
The clean, separated herring fillets are soaked for 1-2 hours in milk and drain well. Wine vinegar and cook with sliced onion, garlic cloves, peppercorns and salt. Be placed herring, make some hot water so as to cover them, and cook 7 minutes. Broth strain, allow to cool and mix with beaten egg yolks, sour cream, paprika and mustard. The sauce is poured on herring. Serve cold.
