Cold spinach soup

Ingredients
500 g spinach
2 large onions
1 head of garlic
100 g walnuts
3-4 tbsp olive oil
1 tbsp red pepper, 1/2 tsp cayenne pepper optional, salt
1 tsp balsamic vinegar
handful of vermicelli
parsley
Method
Onion stew in olive oil. Add red pepper and pour 1 liter of water. When you boil put chopped spinach and after 5 minutes vermicelli. Boil for 10 minutes. In blender minced meat garlic the walnuts, vinegar and salt. Pour the soup with the mixture and stir vigorously. Allow to cool and collect it in the refrigerator to cool. Serve with 1 tsp yogurt and sprinkled with parsley.
