Fried stuffed peppers

Ingredients
8 long fleshy peppers
6 tbsp cottage cheese
1 onion
1 tbsp tomato paste
parsley
3 eggs
4 tbsp milk
flour
breadcrumbs
crumbs of dry bread
butter for vegetable frying
salt
Method
Washed peppers blanched one minute in boiling salted water, withdrawn with latticed spoon, peel, cleaned of seeds and salting inside. In 1 tbsp vegetable oil fry the finely chopped onion, withdrawn and mixed with tomato paste, the cottage cheese, parsley, crumbs of dry white bread and one egg. The mixture is stirred to become homogeneous and it is thoroughly cleaned peppers. Immersed in a thick pancake dough made from the remaining 2 eggs beaten with milk, a pinch of salt and flour, then in bread crumbs and fry in very hot vegetable oil.
