Lemon Jelly

Ingredients
1 1/2 cups crystal sugar
2 cup water
1 tbsp gelatin
4 lemons
1 cup white wine
zest of 1 lemon
1/2 cup cream
1 tbsp caster sugar
4 drained cherries sweet
Method
Sugar is boiled with water and lemon zest, robbing foam and away from the fire and the syrup is melted, stirring, previously soaked in 2 tbsp cold water gelatin. The mixture is filtered and mixed with wine and strained lemon juice. Jelly is distributed in bowls or glasses and leave in the fridge to set. In presenting garnish with shattered to fluffy cream with powdered sugar and fruit of cherry jam.
