Moussaka cauliflower

Ingredients
1 kg cauliflower
2/3 cup butter
3 onions
1/2 cup Rice
5 tomatoes
3 eggs
3 tbsp flour
1 cup milk
cheese 50 g
parsley
salt
pepper

Method
Cauliflower is cleaned and broken into florets. Pour in boiling salted water and boil for 10 minutes. Drain and cut into small pieces. Onions, finely chopped, stew in half butter, add the rice and fry until transparent. Remove from heat and mix with half the tomatoes, chopped parsley, salt and pepper. Add cauliflower. Pour the mixture into a greased baking dish with butter and top cover with the remaining tomatoes, sliced. One of the eggs was mixed with half of the milk and poured into the dish. Bake in preheated oven 15 minutes. Meanwhile makes light roux of butter and flour the rest diluted with the second half of the milk and a little of the potion of cauliflower, add salt and mix with beaten eggs. Moussaka pour the resulting paste, sprinkle with grated cheese and bake until browned.

Very good meal without meat. A bit difficult to prepare but I get better. Bravo for added recipe.
