Octopus in red wine

Ingredients
1 kg young octopus
1/3 cup (70 ml) olive oil
350 g small onions
3/4 cup (150 ml) red wine
1/4 cup (50 ml) vinegar
200 g tomatoes
2 tbsp (20 g) tomato paste
4 bay leaf
4-5 peppercorns

Method
Octopus is cleaned of ink bag, eyes, beak and guts. Clean tentacles. Octopus is skinned, washed and scraped to remove all traces of sand. Cut into pieces 4-5 cm, which is put in a saucepan on medium heat to separate the liquid and stir until it evaporates. Pour olive oil and octopus stir to further loss everywhere. Add purposes onions, stirring once or twice, until lightly colored. Add other products without parsley, tomatoes as pre cut in large pieces. Mix well Cover and leave on low heat to simmer for about an hour, checking from time to time does not evaporate sauce.
