Ingredients
2 large fish
4 tbsp sunflower oil
1 stalk leek - white part only
4 cloves garlic
3 tsp vinegar
3 tsp soy sauce
1 tsp wine
2 tsp sugar
1-2 grains anise
small piece ginger
Method
Fish is cleared, but leaves the head. Wash and dry fry on both sides in 2 tbsp sunflower oil over low heat. In another court alia sunflower oil fry 1 teaspoon vinegar, soy sauce and anise. Onions and garlic are finely chopped and fried in the same oil. Add grated ginger. Pour 1/3 cup hot water and leave to simmer. Fried fish carefully put in the pan with the sauce. Add wine, soy sauce, vinegar and sprinkle with sugar. After 15 minutes, remove the dish from the fire and served in an oblong dish.
