Method
The butter is melted and allowed to simmer until the bottom of the pan is covered with a white layer of residual egg white. Water evaporates without residue. This process takes about 20-30 minutes. For strainer - if hot liquids, use all-metal, and in this recipe, I would say to not replace the patch, it is much finer than any strainer.
