Chicken with pineapple and rice (Nasi Ayam Nanas)

Ingredients
500 g chicken fillet
2 tbsp olive oil
3 cups chicken broth
1 tsp salt
2 cup long-grain rice
1 small pineapple
# Spice:
3 green onions
5 cloves garlic
small piece of ginger root
1 tsp coriander seeds
1 tsp white pepper
1 tsp caraway
pinch of grated nutmeg
small cinnamon stick or 1 tsp cinnamon powder
seeds of two pods cardamom
2 cloves
1 stalk lemon grass or 1 tsp lemon zest

Method
Ginger Peel and together with the onion and garlic finely. All the ingredients for a seasoned mixture is mixed and crushed in a mortar until it forms a paste. It fry for 2 minutes in olive oil. Add sliced ​​pieces and fried chicken continued for 3-5 minutes. Pour chicken broth, stir and let simmer at medium heat until the meat is tender. Broth strain and set aside and it is boiled rice. About 5 minutes before it is ready add the chicken and cut into pieces of pineapple.
