Copper chicken with potatoes and thyme

Ingredients
750 g small baby potatoes
2 small onions
1 head garlic cloves
2 tbsp olive oil
2 tbsp honey or maple syrup
1 tbsp coarse mustard
1 large red pepper
2 large zucchini
thyme stalks
4 large chicken thighs
Method
Potatoes cut into halves. Pepper cleaned and cut into in large pieces. Courgettes halve lengthwise and cut into chunks. Heat the oven to 200 C. In the pan put the potatoes, chopped onions and garlic cloves, leaving 2-3 cloves. Sprinkle with olive oil, salt to taste. Add zucchini, pepper and thyme. Top put whole legs and generously smeared with syrup and honey garlic (2 cloves garlic crushed and mixed with honey). Bake 1 hour until legs are golden. Serve with green salad. To make it tastier can be put under the skin of each leg, a small lump of butter.
