Domino chicken

Ingredients
# For the chicken mousse:
250 g chicken
250 ml cream
1 egg white
salt and white pepper
1-2 pinches nutmeg
# For the white sauce:
60 g flour
100 g butter
2-3 pinches of salt and white pepper
1 tbsp lemon juice
50 ml white wine
20 g gelatin
150 ml cooking cream
# To decorate:
20 black olives
Method
Musat is prepared with cold ingredients. Meat and egg white Strain, add spices and gradually pouring cream until a paste with a foam structure. In a baking dish fasting sheet aluminum foil on it and evenly spread chicken puree. Cover with a second sheet foil, the ends are sealed. Bake in a moderate oven. Cool. Fthe oil is removed and a knife cut rectangles the size of dominoes. For the sauce fry flour 50 g butter, without browning. Pour the wine and 500 ml warm water. Stir vigorously until boil for 15 minutes. Season with salt, white pepper and lemon juice and pulls the fire. Add the remaining butter and cream. Gelatin was dissolved in 4 tbsp water and added to the hot sauce until it melts without boil. Chicken pieces are dipped in white sauce and arrange on a wire rack to drain and tight. From the olives are cut small circles, which are formed domino. Olives can be fixed with colorless gelatin and domino is left in the fridge.
