Moussaka with spinach

Ingredients
1.5 kg spinach
300 g minced meat
2 eggs
2 bunches of spring onions
1 bunch parsley
sunflower oil
red pepper
pepper
salt
# TOPPING:
2 eggs
1 tbsp flour
200 g yogurt
Method
Clean the spinach from the roots and good wash under running water. Put it in a saucepan of boiling, lightly salted water for 2-3 minutes until soft. Leave in a colander, nice to drain. Heat a pan with a little oil and put the minced meat stirring continuously with a fork to stay on the granules. After 1-2 minutes, put onion, salt, pepper and paprika. Reduce heat, add spinach and chopped parsley. Remove from heat and put in the pan diced 2 hard boiled eggs, yogurt and spoon flour. Make a sauce with beaten eggs, yogurt and spoon flour. Transfer to a greased baking pan. Cover with topping. Bake in a moderate oven for 20-25 minutes. A great spring dish that except spinach, you can do with all available seasonal green. Minced meat may be lamb , veal, pork. If you add the sausage, smoked breast. With salad can always improvise - add their spoon mustard, ketchup, curry, crushed garlic, finely chopped dill, parsley. This ideal moussaka can be consumed both hot and cold.
