Method
Panforte is a round cake made of fresh almonds, candied fruit (mainly citrus peels), spices and honey. Consumed cut into very thin slices with a glass of Italian wine - preferably sweet. Hazelnuts and almonds are crushed, put in a bowl with candied fruit, diced, spices and flour. Mix well. In a heavy-bottomed vessel is put honey and powdered sugar. Heat until melted and become syrup, but the mixture should not be allowed to boil. Add nuts, candied fruits, spices and flour - pre-mixed - and mix. With a little butter smeared cake form. Pour the mixture and aligns with a spatula, sprinkled with flour. Bake 35 minutes at 160 C. cake is removed from the oven, although not completely hard. Carefully remove from the mold and allowed to cool one hour on a grid. Plenty sprinkle with powdered sugar and leave for another hour before being cut into very thin slices.

I'm not sure how accurate the recipe for this cake - the original panforte sugar mixture is heated to 116C, which in turn gives a characteristic texture as cool. However, I have prepared the cake exactly as in the recipe in this respect - just melted honey with sugar until liquefy (honey was my candy). I put dried fruit mix and I had to add more honey - I used to 100 g somewhere, maybe more. You have to work fast with warm honey, otherwise it becomes difficult agitation. Baking took me 20 minutes, I used pan 22h12 cm, I think round 20 cm will be suitable too. Get something very very tasty, would badly, but is impossible to stop a thin piece, highly recommend the recipe :)
