Pudding with amaranth

Ingredients
2 cups cooked amaranth
1 cup apple juice
1/2 cup raisins
1/2 cup chopped almonds
1 and 1/2 tsp vanilla
juice of 1/2 lemon
zest of 1 lemon
1 pinch cinnamon
Method
Pour all ingredients in a large pan, cover to a boil, reduce heat and simmer for 15 minutes. The finished pudding pour into dessert bowls. Garnish with grapes or strawberries and cooled in the refrigerator.
