Mackerel in tomato sauce

Ingredients
4 fish mackerel
sunflower oil spreads
salt and pepper
# For the sauce:
1 jar of tomatoes (800 g)
white part of leeks 2
2 pickles
4 tbsp sunflower oil
1 handful of pitted olives
1 tsp parsley
1 tsp salt

Method
Mackerel cleaned, add salt and seasoned with pepper. Allow to stand for 10-15 minutes and transferred to a greased pan. Bake in a preheated oven until browned at 180 C. The sauce is prepared in a hot sunflower oil fry for a minute finely chopped leeks, add pre smashed tomatoes and seasoned with salt. Boil for about 10 minutes, add chopped julienne pickles and olives, seasoned with parsley and simmer for 2-3 minutes. Baked fish is cleaned from the bones, pour the prepared sauce and optional garnish with mashed potatoes or steamed rice.

I have prepared it faithfully as described and it was great.

A great recipe, but I did not put the leeks and onions. Thanks :)

And I put onions, leeks instead. I added also roasted, peeled pepper. Delicious sauce obtain. Goes to favorites.
