Potato soup

Ingredients
8-10 (1 kg) potatoes
3 tbsp (30 ml) vegetable oil
1/2 bunch parsley
3 eggs
salt
vinegar or lemon juice
Method
Potatoes, chopped, placed in boiling salted water with the oil and cook on low heat until soft. Then add finely chopped parsley. The broth is removed from the fire, thicken with eggs and season to taste with vinegar or lemon juice. Serve hot.

This soup January prepare chicken broth instead put parsley bay leaf.
