Pudding with raisins

Ingredients
280 g of beef kidney suet
280 g breadcrumbs
3/4 cup (150 g) flour
220 g sultanas
280 g other variety raisins
1 apple
4 eggs
140 g candied fruits
30 g almonds
rind of 1/2 lemon
juice of 1/2 lemon
pinch of nutmeg
1/2 cup (100 g) sugar
pinch of salt
1/2 cup (100 ml) rum
1/4 cup (50 ml) cognac
1 cup (200 ml) strong beer
Method
Two types of raisins are washed and soaked in rum and brandy. Sift the flour and stir with the following products: bread crumbs, finely chopped suet bovine kidneys, salt, sugar, grated lemon rind, nutmeg, chopped candied fruit (peel), peeled and grated apple, ground almonds and raisins, along with an infusion of rum and cognac.
