Beef liver with vegetables

Ingredients
1 kg beef liver
1 (50 g) carrots
1 cup (200 g) green peas
3-4 heads (200 g) onion
1/4 bunch parsley
60 g butter
60 g salted salo
2-3 (150 g) red tomatoes
2 tbsp (20 g) flour
1/2 lemon
salt
pepper
Method
The liver wash, then dry with a dry cloth, spiking (shpikova) with bits of salo, add salt and sprinkle with paprika. In the cookware placed peas and chopped onion and parsley. Add the liver and pour warm water, enough to cover the vegetables. Cover dish and boil gently for about 1 hour. In the heated butter put the flour and fry until golden color, then pour the sauce dish. To the resulting sauce Add the tomatoes, cut into slices. After simmer for a few minutes, the sauce is seasoned with lemon juice, add salt if necessary, and remove from fire. Upon presentation of the dish, the liver is cut into slices, place in warm bowls and pour the sauce and arrange the vegetables round.
