Fried brain Shopski

Ingredients
800 g beef or pork marrow
2 onions
4 peppers
tomatoes 2
1 bunch parsley
salt
3-4 eggs
frying fat
20 g butter
1 tbsp vinegar
flour
pepper
pepper
Method
Brain soak for 1-2 hours in acidified with vinegar water, then peel, cut into slices, sprinkle with salt and pepper, add some flour and fry in very hot fat. Separately, fry finely chopped onions, peppers and tomatoes, savory with a pinch of salt. As thickened vegetable mixture on it rank fried brain slices and pour in beaten eggs with a little salt. As you begin to tighten eggs (not stirred), dish retired from heat and sprinkle with paprika. The butter was melted, it was stirred parsley and then sprayed on the dish. Serve warm unadorned.
