Ingredients
200 g dry chickpeas
1 clove garlic, finely chopped
1 tsp thyme or savory
1 bay leaf
1 onion, cut into four
2 cubes vegetable or chicken broth
# For TOPPING:
60 ml apple cider vinegar
60 ml olive oil
3 tbsp chopped fresh parsley
1 clove pressed garlic
1 small onion, finely chopped
3 tbsp chopped pickled dried tomatoes
Method
Wash the chickpeas and soak overnight . The next day washed and put to boil in 6 cups water with broth, garlic, thyme, bay leaf and onion. Once it boils, reduce heat and chickpeas let simmer for about 60 minutes until soft. Prepare topping, all products it is broken. When cooked, strain chickpeas and warm mix with topping.
