Ingredients
1 kg fillet of wild boar
150 ml sunflower oil
1 onion
celery
200 ml white wine
7-8 cloves garlic
2 tbsp tomato paste
paprika, savory, bay leaf, salt pepper
# For the marinade:
2-3 tbsp vinegar
1/3 onion
1 bay leaf
10-15 peppercorns
Method
Marinara is prepared in a bowl with 500 ml water are placed vinegar, chopped sliced onion, bay leaf and peppercorns. The meat is cut into slices, soak in the prepared marinade and let stand for about 12 hours. Marinated meat is drained and blotted with a tissue. Fry in heated sunflower oil, enough to get a crust (3-5 minutes on each side) and transfer to a plate. Onions and celery cut into very small pieces and grated carrots. In the fat of fried meat for 1-2 minutes, fry the onion, add the carrots and celery and fry for another 2-3 minutes. Add coarsely chopped garlic, stir and flavored with paprika. Stir again and put the tomato paste, the remaining spices and fried meat. Pour 200 ml hot water and allow to simmer for about an hour and a half.
