Cheese souffle

Ingredients
40 g butter
1 cup breadcrumbs
1/4 cup flour
1 and 1/4 cup milk
1 and 1/2 cup grated cheese or Cheddar cheese
2 tbsp mustard optional
4 eggs

Method
Four porcelain bowls souffle or custard cups with a capacity of 300 ml was smeared with butter and sprinkled with breadcrumbs, and excess shakes. 30 g butter fry until it begins to foam, put the flour and stir for 2 minutes on the stove (if you get the crumbs - this is not a problem). Then the vessel is removed from the heat and add half the milk. Stir mixture until smooth and gradually add the remaining milk. Returns to the fire and stir until the mixture boil and thickened. Remove from heat, add cheese and mustard and stir until smooth mixture. The eggs were divided into white and yolk. Add egg yolks one at a time with stirring to the mixture, then season with salt and pepper to taste. Whip of snow (to form a soft-tipped) and added with gentle stirring to cheese mixture. The mixture is stirred gently to not fall egg whites. Pour into bowls, bake for 15 minutes in a preheated 200 ° C oven, or until golden. Serve immediately. * If your bowls are smaller can use more numbers, or use other forms.

-loving, for cheese lovers like me, this is a great indulgence! Bravo! Now, as I read, my idea comes that bechamel for each recipe can be lightened with protein snow. I never do bechamel just because we tazhak. Soon have cause and will try your recipe. To ask - what happens with soufflé as cool? You drop or just harden, but volume remains?

Rally, dropped our Konush, some 15 minutes after removing from the oven, but then little was left of it. Very slightly, air and tasty, but *Serve immediately* is not accidental;)

is great, I just want to ask where can I buy these bowls, I have not seen in our stores?

In Sofia, certainly there are shops where they sell them, I think that in other cities should have - not something so unusual though :) check it out in stores for kitchenware can find.
