Crispy pork fillet with mustard

Ingredients
400 g pork loin
salt, pepper
1 tbsp fresh thyme
2 tbsp Dijon mustard
3 tbsp mustard seeds (mustard seed)
150 g thin slices bacon

Method
Each fillet is cut lengthwise in half, sprinkle with salt and seasoned with pepper. In a bowl mix the two types of mustard along with fresh thyme. Pork fillets are added to this mixture and rolled, then gently rolled in bacon slices, so be covered almost entirely. Fillets are placed in a suitable container for baking - in the middle of the oven. The dish is baked 10 min at 220 C, after which the oven is reduced to 180 C and baking continues at least 20-25 minutes. Serve warm as fillet and cut in half.
