Roast beef with sauce Hollandaise * *

1 kg veal
salt, pepper
2 cloves garlic
2 tbsp sunflower oil or olive oil
150 g grated carrots
2 eggs
2. tbsp mustard
1 tsp lemon peel
1 bunch green onions
250 g butter
4 tbsp white wine
1 bunch dill
juice of 1/2 lemon

The meat is washed and dried. Rubbed with a mixture of salt and pepper, shpikova with chopped garlic was left for 30 minutes in a refrigerator. meat fry gently in hot sunflower oil on all sides. Transfer to a baking dish and bake in a preheated oven fan mode for about 20 minutes. Prepare vegetable crispy crust as the yolks and whites are separated. Whip well. Mixed with mustard, lemon zest, salt and pepper. Add carrots and chopped onion very finely. The meat is coated with the carrot mixture, so as to produce a uniform crust. meat is doizpicha the oven is preheated to 225 C for 25 minutes. Oven off and leave another 10 minutes. Prepare sauce as the butter melts, egg yolks mixed with wine, put in the water bath and broken gradually and stirring continuously, add hot butter and lemon juice. The finished sauce is seasoned to taste with salt, pepper and finely chopped dill. The sauce is served separately.
