50 g salo
Part of the butter mix with salt and ground black pepper and partridge smeared inside. Salting out their breasts are wrapped with pieces of salo and tied with white thread (possibly can wrap each partridge and two vine leaves). Place in a small saucepan so as to lie on the side, and baked in a very hot oven for 10 minutes. Partridges turn on the other side and bake in a moderate oven for 10 minutes. Then turn to the chest up and bake until soft. Every time you open the oven partridges are flooded with melted butter.
