Ingredients
          3 tbsp olive oil
          2 onions or shallots 1 per ordinary onion
          4 cloves garlic
          1 kg mussels
          1 cup dry white wine
          1/2 cup cream
          4 tbsp butter
          1/2 bunch fresh parsley
          salt

          Method
              Olive oil is heated in a large pot on medium-high heat. Add onion and garlic and sauté until tender, about 5 minutes. Add mussels, wine, cream, the butter and parsley. Season with plenty of salt. Stir well, cover with lid and boil until mussels open, about 10 to 15 minutes. Serve with crusty bread to melt in the sauce.
