Butter baklava with walnuts, figs and chocolate

Ingredients
600 g puff pastry
# For the filling:
1 egg
6 tbsp sugar
4 tbsp flour
10-12 dates
2-3 tbsp brandy or whiskey
1 and 1/2 cup chopped walnuts
2-3 tbsp cocoa powder
100 g dark chocolate (milk), chopped into small pieces
2 tbsp melted butter
# For the syrup:
3 cups sugar
4 and 1/2 cup Water
grated lemon or orange peel
1 tsp butter

Method
We prepare a dry mixture of: chopped walnuts, chocolate chips, cocoa and sugar 3 tbsp. In a separate bowl, beat: egg 3 tbsp sugar until blanching, add flour, melted butter and chopped dates (pre-soaked in brandy, whiskey or other alcohol). Mix gently until a homogenous mixture, which then add to dry ingredients and mix again lightly with a suitable spatula (without mixer). Cut the puff pastry into squares, which arrange in mono muffins, pre-rinsed with cold water. Spread the filling in the middle of each square (to me is received 23 baklava). Baklava Bake in a preheated oven at medium heat in order to fan the sheets well (about 10-15 minutes). Leave to cool completely and pour in hot syrup, as in trays of muffins. Leave overnight so to take good syrup.

format is rinsed with water before baking and how You pour puff-baklava in this small space, taking into account how much dough was rising?
