Ingredients
          1 kg eggplants
          4 eggs
          2 tbsp (20 g) breadcrumbs
          1 tbsp (10 g) flour
          150 g cheese
          sunflower oil
          pepper
          salt

          Method
              Baked and peeled eggplants are Add salt, scatter with red pepper and divide the pieces lengthwise. Rolled in flour, dip in beaten egg, then in bread crumbs and egg again. Fried in sunflower oil heated to pinking. Serve hot, rolled in shredded cheese.

Very tasty! I did a double breading (panicked them with flour and egg). I could, however, to ovalyam in cheese (nothing stuck) and solve the problem :) by simply sprinkled on top. Great recipe!
