Brown sauce

Ingredients
75 g butter
4 tbsp flour
500 ml beef broth
3 tbsp vinegar
3 tbsp sherry
5 peppercorns
1 tbsp salt

Method
The butter is melted in a deep frying pan over low heat . Add flour and stir until the mixture is homogeneous and begin browning. Was added in small portions as a half of the broth was stirred continuously. Add remaining broth and, together with vinegar salt and pepper. Stirred at all times. Sherry is added just before removing from the fire. Serve hot, with the most commonly offered to roast beef.
