Cloud almonds

Ingredients
6 eggs
160 g sugar
250 g roasted almonds, hazelnuts and cashews
butter spreads
150 g crushed biscuits
400 g feta cheese Ricotta
150 ml pastry cream
1/2 lemon peel
4 tbsp caster sugar
20 ml rum optional
strawberries, raisins (for decoration)

Method
Egg whites are separated from the yolks and broken snow with 100 g of sugar. Yolks are broken down with the remaining sugar (60 g) and mix with ground nuts and crushed biscuits. Add beaten whites and the resulting mixture is distributed in greased baking trays. Bake in the preheated oven, then removed from the trays and allowed to cool. Serve with cold cream, which is made by mixing the ricotta cheese, icing sugar, lemon zest, rum and whipped cream. Decorate with strawberries and raisins.
