Fried coarse fish (bonito, mackerel)

Ingredients
600-800 g marine or freshwater fish without scales
salt
lemon
flour
vegetable oil for frying
30 g butter
parsley

Method
The fish is cut from the belly, cleaned from inside, washed under running water, drained, add some flour and fry in very hot oil. Drained of fat in the abdominal cavity put the butter, mixed with a pinch of salt and chopped parsley. Keep in a warm until serving.
