1 large or 2 small zucchini
1 kg peppers
500 g red tomatoes
1 head of garlic
1/2 cup sunflower oil
1 bunch parsley
salt

Method
Peppers and tomatoes (maybe eggplant) are baked and peel. Courgettes are cut to length 10-12 cm, then julienne (you and sliced). Add salt is arranged in a baking dish, sprinkle with sunflower oil and bake in a moderate oven. After baking add chopped red peppers and tomatoes. Season with crushed garlic, parsley and salt.
