Stuffed quinces

Ingredients
8 equal size quinces
400 g minced meat
1 onion
5-6 tbsp sunflower oil
2/3 cup tomato juice
1 tbsp sugar
2 yolks
salt
pepper
cinnamon
Method
Wash quince and covers are cut. Carve out as their walls must remain 1 cm thick. In oil fry finely chopped onion and minced meat, add salt and sprinkle with black pepper and cinnamon. Quince is filled with minced meat with cloud the covers and ranks one layer in a shallow pan. Add tomato juice, sugar, and water, so that 1/3 of the height of quince to be coated. Boil over medium heat, taking care not to quince are dissolved. When ready quince are removed, is thicken the sauce with beaten egg yolks and the dish is served warm.
