Shrimp Fra Diavolo

Ingredients
500 g large shrimp, cooked and peeled
1 tsp salt
1 tsp dried pepper - chili, ground or flaked
5-7 tbsp olive oil
1 onion
3 cloves garlic, chopped
1 cup dry white wine
1/4 tsp dried oregano
3 tbsp chopped fresh parsley
3 tbsp chopped fresh basil
800 g of canned tomatoes or 7-8 tomatoes, blanched and peeled

Method
Mix the shrimp with salt and chili pepper in bowl. Heat 4 tbsp olive oil in a large skillet over medium-high heat. Add shrimp and saute for 1-2 minutes, stirring constantly. Transfer the shrimp in a large bowl. Add chopped onion in the same pan, adding 2-3 tbsp olive oil if necessary and saute until the onion becomes translucent for about 5-10 minutes. Add the can of tomatoes with sauce, wine, garlic and oregano. Cook until sauce thickens slightly, about 10-15 minutes. Return the shrimp to the pan and cook for about 1-2 minutes so that the flavors to come together. Put the parsley and basil. Add salt to taste and serve with toasted bread with grated feta cheese Parmesan or Grana Padano.
