Ingredients
500 g asparagus
2-3 sprigs of parsley
1 sprig fresh onion
smallage
1 onion
1 egg
pinch of salt
pinch of pepper
1 tbsp (10 ml) vinegar
3 tbsp (30 ml) vegetable oil
1 tsp mustard
Method
Asparagus is cleared, boil in salted water and then drain is allowed to cool. Of chopped herbs, onions and egg, vinegar, vegetable oil and mustard sauce is prepared. Season with salt and pepper. Pour into the cooled asparagus and serve.
