Fan with egg

Ingredients
200 g of dry bread
200 ml milk
250 g roasted eggplant
200 g tomatoes
150 g feta cheese
70 ml sunflower oil
5 eggs
5 cloves garlic
1 bunch parsley
salt

Method
The bread is cut into small pieces and pour the milk. Prepare a mixture of roasted eggplant, half the tomatoes, cleaned of skin, crushed garlic, 100 g feta cheese, grated. Mix well with a mixer and add soaked bread. Again stirred until a homogeneous mixture by adding more than half sunflower oil and salt. The finished mixture is distributed in fan 5 plates. At the heart of each fan is put 1 egg, pre-fried in the remaining sunflower oil. Portions garnished with remaining red tomatoes, grated feta cheese and chopped parsley.

That's what I loved it and it sounds good, only this fan ... something I do not understand how it would have formed. But looks great. Ina wonderful recipe, thank you, I will try to see what crafted. If I make a little to bring him to your will is great.

The picture is not mine. I know at least two options for shaping. One is Posh-gun, the other is placing the entire mixture with the blunt end of a thicker blade shape the different parts of the fan. Success and put a picture!
