Octopus in marinade

Ingredients
1 kg young octopus
3/4 cup (150 ml) olive oil
3/4 cup (150 ml) vinegar
4 cloves garlic
1 tsp dried thyme
pepper
salt
lemon
Method
Octopus is cleaned of ink bag, eyes, beak and guts. Clean tentacles. Octopus is skinned, washed and scraped to remove all traces of sand. Head and tentacles are placed in a pan with 1/3 cup (70 ml) of water and simmer on low heat for about an hour, until tender. Drained of all fluids and allowed to cool. Cut the meat into strips about 1 cm and placed loosely in a jar with a screw cap. Mix olive oil and vinegar, enough to fill the jar. Add other products and mix well. With the finished mixture zliva meat in jars, so as to fully cover. The jars are closed and leave to stand for 4-5 days, after which the octopus is ready for consumption. Serve meat only, drained of the marinade with lemon pieces.
