Walnut sponge cake with dates

Ingredients
250 g of dates
1 and 1/2 cup walnuts
1 cup flour
4 eggs
1 cup sugar
6-7 cardamom grains
3-4 tbsp olive oil
rind of 1 orange
pinch of salt
powdered sugar for sprinkling
Method
Dates are cleaned from the stones and scalded with hot water. Leave to soak for 10 minutes, then drained and chopped or ground in a blender. Kernels are ground in a blender with 2-3 tsp sugar. Mix in the sifted flour and dates. Sprinkle with a little salt. Egg whites are separated from the yolks and broken snow by adding sugar. The yolks were broken using a blender and mixed with the egg white. Gradually add the walnut mixture. Taste with crushed cardamom, orange zest and olive oil and mix. Transfer to a greased and floured cake pan. Bake for about 45 minutes in a preheated 160 C oven. Cake is served cold and sprinkled with powdered sugar.
