Eclairs with savory stuffing

Ingredients
500 ml water
250 g flour
125 g butter
7 eggs
pinch of salt
salt stuffing of your choice

Method
Once the water boils, put the salt, the butter and flour ( time). Stirring continuously, until the dough begins to separate from the walls of the vessel. Once cooled down add the eggs one at a time and mix well (to put a new egg, after the dough has taken very well the previous). In not oiled nenabrashnena tray and put a tablespoon balls of dough off. Bake in preheated moderate oven. Do not open until baked. After baking in the oven are allowed. cool eclairs carefully open and filled with savory stuffing optional. For example: - 100 g ham grind, mix with several broken tbsp butter and seasoned with a little grated horseradish. - Anchovy paste is mixed with 1 tbsp broken butter, 2 hard boiled and cut into chopped eggs, 1 tbspmayoneza and chopped parsley; - 40 g butter mix of foam mixed with 10 finely chopped olives and seasoned with lemon juice.
