400 g zucchini
2-3 green onions
2 tbsp yogurt
2 tbsp sunflower oil
100 g feta cheese or cottage cheese
1/4 tsp salt
1/2 tsp bicarbonate of soda
2/3 cup flour
2-3 sprigs of dill

Grate the courgettes in large pieces Salt them and leave for 15 minutes. Cut the onion finely. Add eggs, yogurt, the oil, grated feta cheese, salt and pepper. Beat well. Squeeze well courgettes and add them to the mixture shattered. Add the chopped dill. Mix the flour with the baking soda and add to egg mixture. Mix until a homogenous mixture. Pour into greased muffin form or other suitable pan. Bake 40-45 minutes in preheated oven at 180C degrees with blowing. Serve warm with yogurt, kefir or fresh salad. * The products are for 12 muffins.
Great idea! Do with these products meatballs and roast them instead of frying them. In mono muffins will be perfect! :)
Several times I did meatballs Zucchini, but as well as fry absorb much oil, and that I refused to prepare them so. Wondering how to do something similar, but with a little oil, I came to the idea of a zucchini muffins.
muffins are wonderful! Became just as we love them (neither too juicy nor too dry). And we liked the cold :)
