Rabbit with beer

Submitted by enr on 03 Jan 2009
Ingredients
1 small rabbit
200 g smoked salo
1 tbsp flour
20 small onions (shallots)
10 cleared olives
250 ml beer
1 bunch root soup (carrot, celery, parsley)
salt
pepper
Method
Well wash the rabbit cut into pieces. Together with chopped salo fry lightly. Add flour, clean onions, olives, chopped roots, salt, pepper and pour the beer to cover the meat. Boil with the lid closed for about an hour on low heat (for faster can be used a pressure cooker). Serve with mashed potatoes or cooked with pasta and green salad or pickles.
